I'm not really sure if it was this Richard Knibbs or not, but I'm sure he'd forgive me if it was another Richard Knibbs of Deddington. Jackson's Oxford Journal from June 1859 reports the following:
Wootton North Division.- Deddington, June 3.
Before J. Lechmere, Esq., Colonel Bowles, the Rev. W. C. Risley, and the Rev. T. Curme.
Edwin Butler, of Aynho, was charged with being drunk and disorderly at Clifton, about one o'clock in the morning of Sunday 15th may; ordered to pay 5s., with a caution to avoid being drunk again, or he would not be so leniently dealt with.
Robert French, of Deddington, was summoned for being drunk and disorderly at the same place on the 13th May, and assaulting P.C. Cartwright in the execution of his duty; and Richard Knibbs of Deddington, was charged with resisting P.C. Hawkins in the execution of his duty on the said occasion, by trying to prevent the police taking French into custody; he was sorry if he had in any way interfered wrongfully, as he merely lifted him up from the ground, and afterwards took his shirt to him; ordered to pay 10s. each, including costs. Time being asked for, they were allowed 14 days; Knibbs received a strong reprimand from the Bench, and was cautioned as to his future conduct, as he had rendered himself liable to a penalty of 20/.

It is believed that Richard's first wife Mary Jane died after 1881, and that Richard then remarried to Susannah Taylor from Buckingham, Buckinghamshire, England. Richard moved to live in Buckingham and can be seen in a book called "Directories of Buckingham", he was a Confectioner in Well Street, Buckingham between 1903 and 1920.

The 1881 census clearly shows that Susannah's father was a Confectioner and also lived at Well Street, Buckingham, so I suspect that the shop was originally his, and passed down to his daughter Susannah after he died in September 1890. No record of the shop is seen after 1920 until 1931 when it is clearly run by his wife Susannah.

Despite his first and second wives having the surname of TAYLOR, I haven't proved any connection between them as yet. They are clearly not sisters, but I note that each has a connection with Deddington, Oxfordshire. Mary Jane Taylor was baptised there. Susanna's father Joseph was born there. It can also be seen in 1881 that Susannah had a cousin, Jane Taylor from Deddington living with her.
